Quinoa Tabouli

  • 3 cups fresh Parsley
  • 1 cup fresh Mint
  • 2-3 Spring Onions roughly chopped
  • 1/4 cup soaked Pumpkin seeds
  • 1/4 cup Olive oil
  • 1/4 cup Lemon juice
  • 1 cup cooked Quinoa
  • 2 medium Tomatoes diced


  • Place Parsley, Mint, Spring Onions and Pumpkin seeds into the food processor and process until finely chopped.
  • Stir through the remaining ingredients and place in a serving bowl.
