Quinoa Tabouli
Ingredients
- 3 cups fresh Parsley
- 1 cup fresh Mint
- 2-3 Spring Onions roughly chopped
- 1/4 cup soaked Pumpkin seeds
- 1/4 cup Olive oil
- 1/4 cup Lemon juice
- 1 cup cooked Quinoa
- 2 medium Tomatoes diced
Instructions
- Place Parsley, Mint, Spring Onions and Pumpkin seeds into the food processor and process until finely chopped.
- Stir through the remaining ingredients and place in a serving bowl.
