Indian-style Chickpea Curry

Ingredients
  

  • 1 tbsp Olive oil
  • 1 large Brown Onion, chopped
  • 2 cloves Garlic, crushed
  • 1 tbsp ground Coriander
  • 1 tbsp ground Cumin
  • 1 tsp Turmeric
  • 1 tsp Paprika
  • 1 tsp Garam Masala
  • 1 can Tomatoes
  • 1 can Chickpeas
  • 1/2 tsp Salt
  • fresh Coriander & Mint

Instructions
 

  • Heat the Oil in a pot,and add the Onion and Garlic. Fry until they just start to turn golden.
  • Add the Spices and cook for 1-2 mins, stirring frequently.
  • Add the Tomatoes and Chickpeas and cook for 15-20 mins, finally add Salt to taste.
  • Garnish with the fresh Coriander and Mint.

Notes

Either serve immediately for a quick dinner or leave a few hours for the flavors to develop, and reheat before serving.
