Indian-style Chickpea Curry
Ingredients
- 1 tbsp Olive oil
- 1 large Brown Onion, chopped
- 2 cloves Garlic, crushed
- 1 tbsp ground Coriander
- 1 tbsp ground Cumin
- 1 tsp Turmeric
- 1 tsp Paprika
- 1 tsp Garam Masala
- 1 can Tomatoes
- 1 can Chickpeas
- 1/2 tsp Salt
- fresh Coriander & Mint
Instructions
- Heat the Oil in a pot,and add the Onion and Garlic. Fry until they just start to turn golden.
- Add the Spices and cook for 1-2 mins, stirring frequently.
- Add the Tomatoes and Chickpeas and cook for 15-20 mins, finally add Salt to taste.
- Garnish with the fresh Coriander and Mint.
Notes
Either serve immediately for a quick dinner or leave a few hours for the flavors to develop, and reheat before serving.
