Spinach and Rocket Salad
Ingredients
- 1 cup Rocket leaves
- 1 cup baby Spinach leaves
- 1 Spring Onion finely sliced
- 1/2 cup fresh Strawberries
- 2 tbsp Pumpkin seeds soaked overnight in water
- 1 tbsp Balsamic vinegar
- 2 tbsp Olive oil
- 1/2 tsp dried Mustard powder
Instructions
- Whisk the Vinegar, Oil and Mustard together to create the dressing.
- Toss remaining ingredients together and pour the dressing over the Salad.
Notes
When Strawberries are out of season substitute Peaches, Mango or any other soft fruit.
