Salad
  1. 1 can Chickpeas, drained and rinsed
  2. 1 can Lentils, drained and rinsed
  3. 1/4 cup soaked Pumpkin seeds
  4. 1 stalk Celery, finely sliced
  5. 1-2 Tomatoes, chopped
  6. 1 cup Cucumber, chopped
Apple Cider Vinegar Dressing
  1. 2 Tab Apple Cider Vinegar (or Lemon juice)
  2. 4 Tab Olive oil
  3. 1 tspn dry Mustard powder
  4. 1 tspn Miso paste
For the Salad
  1. Combine all the salad ingredients in a bowl.
For the Dressing
  1. Whisk all the dressing ingredients together.
Notes
  1. Add hard-boiled Eggs and Anchovies for a quick dinner.
  2. For a vegan version omit the tomatoes and add an Apple or Pear and chopped Walnuts.
  3. The Salad will keep 3-4 days in the fridge and will improve over that time.

  1. 1 Tab Balsamic Vinegar
  2. 2 Tab Olive oil
  3. 1 tspn Miso paste
Salad
  1. Combine the ingredients in a bowl.
Dressing
  1. Whisk the dressing ingredients together.
  2. Gently combine salad and dressing.

  1. 1/2 cup seedless Green Grapes
  2. 1 Green Apple, chopped
  3. 1-2 sticks Celery, chopped
  4. 1 Courgette, finely sliced
  5. 1/4 cup Walnuts, crumbled
  6. 1/4 cup soaked Pumpkin seeds
  7. 1 Tab homemade Mayonnaise
  8. juice of 1/2 Lemon
Instructions
  1. Combine all the ingredients in a large bowl. Place in the fridge for a few hours to let the flavours develop. Remove 30 mins before serving.
Notes
  1. Option: Serve on a bed of Cos Lettuce. Add Avocado for a vegan dinner option. Smoked white fish also works well with this salad.
