Ingredients
  1. 1 can Chickpeas, drained and rinsed
  2. 2 scoops vegan Protein powder
  3. 1/4 cup Maple Syrup
  4. 1/2 cup Peanut Butter
  5. 1/2 cup ground Almonds
  6. 1 tspn GF Baking Powder
  7. 1 tspn Vanilla
  8. 1/3 cup Sultanas
Instructions
  1. Place Chickpeas, Protein powder and ground Almonds in the food processor and chop to a crumb. Add remaining ingredients and process until it forms a dough. Wet hands an shape 12 cookie balls. Place on a tray covered with baking paper and flatten slightly with a fork. Bake at 200c for approx 15-20 mins.
Notes
  1. Option - swap the Sultanas for Cacao Nibs for a Choc chip version

Ingredients
  1. 1/4 cup whole Flaxseeds
  2. 1/4 cup Chia seeds
  3. 1 cup Water
  4. 1 Tab Olive oil
  5. 2 Tab Tamari Soy sauce
  6. 1 cup ground Flaxseed
  7. 1/2 cup Sesame seeds
  8. 2 Tab Poppy seeds
  9. 1 tspn Sea Salt
Instructions
  1. Mix whole Flaxseeds, Chia seeds and Water together and leave for 15 mins (stirring occasionally). In the meantime mix remaining dry ingredients in a bowl. Add the gel, Olive oil and Tamari and combine well.
  2. Place mixture on baking paper on an oven tray. Using the back of a spoon spread out until 2mm thick. Bake at 180c for 30 mins, remove from oven, cut into squares and return (heat now off) for a few more minutes (until crispy).
  3. Store in an airtight container.
Notes
  1. The key point with these crackers is to make them as thin as possible. This mixture will cover an oven tray 30cm x 42 cm! It just takes a bit of time and patience to spread thin.

  1. 1 and 1/2 cups cooked Kumara (sweet potato), mashed
  2. 1/2 cup ground Almonds
  3. 1/3 cup Honey (or brown rice syrup)
  4. 1/2 cup Raisins
  5. 1/2 cup Buckwheat flour
  6. 2 tspn GF Baking Powder
  7. 1 tspn Vanilla
  8. 1/3 cup Cacao Nibs
  9. 1 Tab Coconut Oil
Instructions
  1. Cook and cool the Kumara completely.
  2. Put all ingredients in the food processor and process to combine. It's quite a sticky mix (add a little more flour if too wet to shape). Place spoonfuls on baking paper and cook for about 20 mins at 180c.
Notes
  1. This recipe works well as a slice also. Saves time and just cut into small squares when cooked.

Instructions
  1. Use the food processor to finely chop the seeds, add the nuts and process again for 2-3 mins. Add berries and process another minute. Add liquids and Cacao and process until it forms a ball. Wet hands in a little cold water. Divide the mixture into 20 and shape into small balls. Roll in Coconut. Place in the fridge for at least an hour before serving. Store in the fridge.

Ingredients
  1. 4 cups Walnuts
  2. 1 cup Raisins
  3. 1 cup soaked Dates (drained well)
  4. 2/3 cup Cacao Powder
  5. 2 tspn Vanilla
  6. 1-2 Tab cold Water
Instructions
  1. In the food processor blitz the Walnuts, then add the other ingredients (except Water) and process until it's coming together as a ball (this will take a few minutes). Lastly add Water and blitz again to make it smooth and fudge-like.
  2. Press into a square baking tin lined with cling film.
  3. Freeze for 30 mins then cut into small pieces. store in the fridge.
Notes
  1. Options: Add a few drops of pure Peppermint or 1 tspn of Fennel seeds.
